We have our first ever Australian T1D guest today, Nina Gelbke. Nina developed a passion for nutrition after being diagnosed at age 9 and after struggling with an eating disorder throughout highschool.
She is an accredited nutritionist and sports nutritionist (BHSc), CrossFit trainer, and competitive athlete. Her aim as a plant-based nutritionist and fitness coach is to educate, support and empower her clients with food.
In this episode we talk about...
- Her struggle with blood sugar perfectionism - what helped her change her mindset and how it’s still a work in progress
- The value of eating not just for insulin sensitivity, but also for happiness
- Nina’s exact approach to prepare for a 4k ocean swim (and how she didn’t go low during it!)
- The importance of trial and error for learning how to fuel your body for different activities
I do want to give a trigger warning that we touch on diets and disordered eating. So please skip this if you are not in a good place to explore these topics.
